Cheese Boards are a fantastic way to offer a variety of flavors, textures and gastronomic experiences.  Through this class we will share with you a variety of cow and goat cheeses produced here in New York's Adirondack mountains and Champlain valley.  

Featured farms and dairies include Asgaard Farm, Sugar House Creamery and North Country Creamery.

What are the characteristics of a great cheeseboard?  How many and what types of cheese should be served? What garnishes should accompany a cheese board?  Where can I get great local cheese?  These are all questions that will be answered as we explore the award winning cheeses of our area, discuss the components of a great cheeseboard and then build and share a truly local and delicious cheese board that celebrates our areas dairy excellence and heritage.

Chef Curtiss will assemble a cheese platter that offers, balance, contrast and versatility where beverages are concerned; a platter that can be replicated at home with ease.

The following simple and delicious garnitures will also be demonstrated:

Pinot Noir Stewed Prunes
Roman Marinated Olives
Maple Spiced Walnuts
