Chef Curtiss is bringing in his two lambs from the slaughterhouse and will be demonstrating the breakdown of an entire lamb into primal, sub primal and retail cuts.

This class is for anyone that is curious about where certain cuts come from, what makes certain cuts more tender than others and the variety of cuts that can come from an animal.
