France has long been an inspiration for chefs, with their well groomed cuisine, traditions and love for fine food and entertaining being unmistakable. Chef Curtiss was fortunate to spend a significant amount of time in France. While Paris is the icon of french cuisine it was the countryside and its people that captured his attention.

Demonstrated recipes include:

Escargot Pomme Du Lac
french helix snails, butter, cider, shallots, herbs, apple brandy

Poulet Vol Au Vent
chicken breast, tarragon, mushroom, pearl onion, white wine, puff pastry shell

Cheese Course
a selection of cheeses, stewed prunes, maple spiced walnuts

Paris Brest
pate au choux, praline cream, caramel sauce

Join Chef Curtiss as he prepares and demonstrates a collection of recipes inspired by the holiday season and his time in France.

Registration for the class includes:

printed recipe packet
complimentary bottled water
individual hors d’oeuvres plate

During the class select wines and beverages will be available from the Mirror Lake Inn for an additional charge.
