The rise in popularity and access of local craft brewing allows us to showcase dishes in which beer can be used as focal ingredient, with beer driving the character and flavor of the dish.

During this class Chef Curtiss will demonstrate and prepare several delicious recipes he has developed featuring beers from some of the Adirondacks best breweries including Ausable Brewing Co., Paradox Brewing and Ledge Hill Brewing.

The menu and recipes for the class include:

Paradox Bisque
stock, milk, paradox pilsner, ny extra sharp cheddar,
herb, lardon

Ausable Brewing Strip Steak
reverse seared strip steak, hair of the badger hollandaise, oscar’s aligot potato, pan roasted mushrooms, pearl onions

Ledge Hill Fool
roasted peach coulis, ledge hill fool whipped marscapone, pound cake

During the class select wines and beverages will be available from the Mirror Lake Inn for an additional charge.
